Favourite dish to cook: Braised neck of lamb

Recipe of dish: Wash the trimmed neck and set into a suitably large casserole dish that will fit easily into the oven. Tuck into the spaces between the meat and the dish your favourite root veg and as many button mushrooms as you can. Splash in some good red wine, add a couple of bay leaves and some whole black pepper corns and seal. Pop into a slow oven (around 130) and braise gently for around 4 hours. Serve with your choice of side dishes.    

Best experience in the kitchen: I think probably cooking for Daluh Omar and Barbra Hogan at a celebrity bash is my high point.

Worst experience in the kitchen:Arriving at a function venue to find it on fire. Had to put the fire out before we could start preparing the meals.

What is your best gadget or tool - can't cook without it! My Japanese Santuko knife. My pride and joy.

How do you lead your team: With a focus on respect and team effort.

What inspires your menu: Finding little gems to delight the senses.

What is your favourite word in the kitchen: Order up

Which Chefs inspire you: Andy Thompson. Love the way he is supremely calm and focused all the time. Also, Marco Pierre White for his sheer skill.

Have you won any prizes: Yes

Countries that you have travelled to -which food did you enjoy the most: I tend to focus on SA cuisine because it is a culture of food that speaks to me. 

The hardest dish you find to cook: Zabaglioni

The dish you have created yourself: Savoury avocado cheesecake

When did you know you would be a Chef: I used to help make the canape’s at family do’s when I was very little. Something about the mechanical artistry that goes into food appealed to me even then.

Your feelings about this, your restaurant: plum restaurant offers the best of all possible worlds. Great coffee, attention to detail on a small menu that is adaptable and well priced. Anyone can return and find some little gem to try without feeling fussed.

What is your comfort food - a guilty pleasure: Macaroni cheese. 

Do you enjoy other people cooking for you: I love it when others cook for me …especially if it is mac and cheese…
