What do you enjoy most about your work?
I am passionate about what I do so I really enjoy everything, but the parts that I would say I enjoy the most would be creating a dish from the freshest ingredients available, then be able to smell and taste all the flavors that bring that dish to life. Seeing the reaction from a table when they eat and enjoy and give positive feed back to what you created, must be one of the greatest honors as a chef. Secondly would be the rush that you get from busy Friday night a’la carte kitchen were you walk away at the end of the night and you still on a high from the nights service, must also be one of the greatest feelings in my opinion.
Who have been the biggest inspirations for your career?
There have been a number of Chefs in my career that has been an inspiration to me, so I think to pick one would not be gentleman like. Some are from when I trained at Cristina martin and some are international chefs. Let’s just say they all influenced me in there own way. 1 person that has pushed me to be the best that I can be is my wife always and for ever supportive. When training I was told “steel with your eyes ‘’and that’s what I always tell the chefs look and learn from what you see around you.
Ingredients
I enjoy using fresh ingredients as soon as possible to get the maximum flavour from them, my top ingredients are as followers- Rosemary, Thyme, Oregano, Coriander, Ginger, Garlic, Basil , Chilli, Sundried tomato and of course a variety of micro herbs. I believe that if you respect your product you will be able to expose its full potential of flavours and textures.
Vision for Wodka?
Wodka has a Cosmopolitan/industrial feel to it, with phenomenal food and a great setting. The restaurant which is situated in Docklands Hotel stretches out into a beautiful court yard were you could be sitting and relaxing sipping on cocktails listening to either our Dj on Saturday nights or the Sunday Jazz band. I believe that Wodka will soon be one of the top restaurants in Kzn, if not already in the top 10. I believe we will also be up there with the top restaurants in South Africa’s in a short amount of time. Wodka is really thriving at the moment and is going places fast. It attracts high profile people to the young trendy crowd, if you love your food then Wodka is a must.
Wodka is visually open to the kitchen – How do you feel about this?
Well we take great pride in our product and don’t mind showing off, we have a open action Tepanyaki style kitchen, were the guests can sit around and view the chefs doing there thing. From making hot and cold starters, Sushi and to Tepanyaki. you also get the pastry chefs spinning sugar works and creating out of this world desserts. The guests also get to interact with the chefs and learn how there dish’s are made and what ingredients get used, so its very interactive and its part of the experience of coming to Wodka
